Colombia Excelso Popayán grows in the fertile soil of the Cauca region. The city of Popayán is located in the valley of Pubenza, and is one of the central coffee producing micro-regions within Cauca. High annual rain levels (2,200 mm/year) combined with volcanic soil makes it prime land for outstanding coffee. Coffee farms in the region are mostly of less than 5 hectares.
A cool mountainous climate prolongs the development of the Popayán’s coffee cherry, deepening the berry flavor absorbed by the coffee bean. This flavour is accentuated during the fermentation and the wet-processing stages.
